Easing into Autumn

I am going to start by repeating what a gazillion others have already said “I LOVE Fall!” and I love the other seasons too (summer being my least favorite) but I really look forward to everything the fall has to offer. Pumpkin flavored everything, cooler temperatures, the leaves changing, and how the light looks this time of year – it’s great.  Oh, and football, how could I forget football.  Anyway, with the temperature dipping slightly last week I got a huge craving for tortilla soup.  I asked my friends if they could share a recipe with me because although I think I cook pretty well I am not very good at making soups.  I can never get the base just right. However,  I happened to make two batches of my soup and I think I found my personal recipe and I would like to share it with you.

Kelly’s Tortilla Soup

1/2 Rotisserie chicken pulled off the bone or a package of boneless chicken legs (my favorite)

5 cups chicken broth or stock

1/2 white onion, diced

1 can of Ro Tel

2 jalapeno, diced and keep the seeds of one to add to the pot

1 Can Black Beans (I made fresh so it was about 1 and 1/2 cups)

1 Can Corn

1 tsp Salt

1 tsp Cumin

For toppings I had tortilla chips diced avocado and cilantro.

1. Dice onion very fine and caramalize in pan with a little oil of your choice.

2. If you have raw chicken brown it with the onions but do not cook.  I firmly believe in browning chicken before adding to soup, it really does taste much better this way but if you are short for time just omit this step.

3. After your chicken is browned add it and the rest of your ingredients to either a crock pot or soup pot.

4. Turn your crock pot on low for 4-6 hours, before serving shred the chicken a little more and add any additional toppings.

As you can tell from the recipe, I love spicy food so you may have to play with how much heat you want from the jalapeno.  I wish I had a nice picture of my soup bowl with diced avocado and cilantro but I couldn’t wait to dig in.  Perhaps next week when I make this again (yes, third time in a row) I will take a quick picture.

I am also on the lookout for some really good bean soups using either white beans or black beans.  I want to start eating lentils for the health benefits and I want food that will keep me satisfied for long periods.
